Taking a look at the copyright info in the Brazilian Portuguese version, I found the original font used for Ford's handwriting in the Gravity Falls Journal 3:

Norwich, designed by Nicholas Garner and published by AVP.

Comparison made with a demo of the font for demonstration purposes only, the full commercial license costs $29.
